    The 20-Minute Dinner You’ve Been Waiting For

    Let’s be honest: after a long day, the last thing any of us wants to do is spend an hour standing over a stove. But that doesn’t mean we should settle for boring, uninspired meals.

    If you’re looking for a recipe that feels a bit special, packs a serious protein punch, and—most importantly—is ready in less than 20 minutes, you have come to the right place. This Mediterranean-inspired rotini is my go-to when I want something nutritious but feel like I’m treating myself.

    What makes this dish a winner isn’t just the speed; it’s the flavour profile. We’re using HECK! Simply Chicken Chipolatas here, which are fantastic because they’re lean, full of flavour, and take mere minutes to brown up perfectly in the pan. Paired with tangy feta, briny Kalamata olives, and a rich passata base, this pasta is a masterclass in balancing simple ingredients.

    The Recipe

    Serves 4

    Ingredients:

     2 tbsp olive oil

     340g HECK! Simply Chicken Chipolatas (the full pack!), sliced into rounds

     1 medium onion, finely diced

     1 clove garlic, minced

     250g passata

     100g baby spinach

     600g cooked whole-wheat rotini

     50g pitted Kalamata olives, roughly chopped

     ¼ tsp salt

     ½ tsp crushed red pepper flakes (adjust to your heat preference!)

     60ml reserved pasta water (this is the secret to a glossy sauce)

     100g feta cheese, crumbled

     20g fresh basil, chopped

    How to Make It

    1. Prep the Pasta: Boil your rotini according to the packet instructions. Don’t forget: before you drain it, scoop out about 60ml of that starchy pasta water. It’s the secret weapon that helps the sauce cling to the noodles.

    2. Sauté the Base: Heat your olive oil in a large frying pan over medium-high heat. Toss in your sliced HECK! chicken sausages, onion, and garlic. Cook them together for 6–8 minutes, stirring occasionally, until the sausages are beautifully golden brown and the onions have softened.

    3. Simmer the Sauce: Pour in the passata, salt, and red pepper flakes. Let it simmer for about 2 minutes so the flavours have a chance to mingle.

    4. Wilt & Combine: Throw in your spinach and chopped olives. Stir them through the sauce until the spinach has just wilted. Now, fold in your cooked pasta and that reserved splash of pasta water. Toss everything together until every spiral of pasta is coated in that delicious sauce.

    5. The Finishing Touch: Remove from the heat. Stir through most of your crumbled feta and fresh basil. Serve it immediately in warmed bowls, and sprinkle the remaining feta and basil on top for that perfect finish.

    A Few Quick Tips

     Make it your own: If you’re a fan of extra veggies, some sun-dried tomatoes or even finely chopped courgette work beautifully in this base.

     Storing: This keeps really well in an airtight container in the fridge for up to two days. It makes for an excellent, easy lunch the next day!
