Hot Honey Halloumi & Chicken Loaded Flatbreads: An Easy 20-Minute Dinner

If you are looking for a quick dinner that feels a little bit special, these hot honey halloumi and chicken loaded flatbreads are exactly what you need.

They are full of all the good things: crispy golden halloumi, warm juicy chicken, cool creamy tzatziki, crunchy salad and that sticky, sweet, slightly spicy hot honey drizzle over the top. It is the perfect balance of flavours and textures, and honestly, it tastes like something you would order from a lovely little café or street-food place.

The best bit is that they are so easy to make. There is no complicated prep, no long list of ingredients and no need to spend ages in the kitchen. You can have these on the table in around 20 minutes, which makes them ideal for a busy weeknight when you want something more exciting than the usual dinner.

I love recipes like this because everyone can build their own flatbread exactly how they like it. Add extra halloumi, more chilli, lots of tzatziki, skip the onion if you are not a fan—it is completely up to you.

Why You’ll Love These Loaded Flatbreads

These flatbreads are fresh, colourful and incredibly satisfying.

The halloumi is fried until golden and crisp around the edges, then coated in a little hot honey. The salty cheese with the sweet honey and chilli flakes is just so good. Add soft warm flatbread, tender chicken and a crisp salad, and you have a proper meal that feels indulgent without being difficult to make.

They are also brilliant for sharing. Put everything in bowls in the middle of the table and let everyone make their own. It is a really easy meal for a relaxed Friday night, lunch with friends or even a casual summer dinner in the garden.

Hot Honey Halloumi & Chicken Flatbread Ingredients

This recipe makes 2 large loaded flatbreads.

    For the hot honey:

    2 tablespoons runny honey
½–1 teaspoon chilli flakes, depending on how spicy you like it
½ teaspoon white wine vinegar or lemon juice

    For the loaded flatbreads:

2 large flatbreads, naan breads or pittas
    225g halloumi, sliced
200g cooked chicken breast, shredded or sliced
    1 teaspoon olive oil
    4 tablespoons tzatziki
1 small gem lettuce or 2 handfuls shredded lettuce
¼ cucumber, thinly sliced or ribboned
½ small red onion, finely sliced
Small handful fresh mint or coriander, optional
    Extra chilli flakes, optional

How To Make Hot Honey Halloumi & Chicken Flatbreads

Start by making the hot honey. Mix the runny honey, chilli flakes and white wine vinegar or lemon juice together in a small bowl. If you are not keen on too much heat, begin with half a teaspoon of chilli flakes. You can always add more at the end.

Warm your flatbreads in a dry frying pan for around 30 seconds on each side, or pop them in the oven for a few minutes. Keep them covered with foil or a clean tea towel so they stay soft and warm while you prepare everything else.

Heat the olive oil in a frying pan over a medium-high heat. Add the halloumi slices and cook for around 2–3 minutes on each side, until they are beautifully golden and crisp.

Once the halloumi is ready, turn the heat down low and pour over around half of the hot honey. Carefully turn the halloumi in the pan so it gets coated in all that lovely sticky glaze. Keep an eye on it because honey can catch quickly, and you want it glossy rather than burnt.

Warm the cooked chicken through in the same pan for a minute or two, or simply microwave it until piping hot.

Now it is time to build your flatbreads. Spread two tablespoons of tzatziki over each warm flatbread, then pile on the shredded lettuce, cucumber ribbons and finely sliced red onion.

Add the warm chicken, followed by the hot honey halloumi. Drizzle over the rest of the hot honey and finish with fresh mint or coriander, plus extra chilli flakes if you like a bit more heat.

Serve straight away while the halloumi is still hot and crispy.

My Top Tip For The Best Halloumi

Halloumi is definitely at its best when it comes straight from the frying pan. It is lovely and soft in the middle with that golden crisp edge, so have everything prepped and ready before you start cooking it.

Slice the cucumber, shred the lettuce, warm the flatbreads and mix the hot honey before you put the halloumi in the pan. Then you can quickly layer everything up and eat it at its very best.

If the halloumi sits around too long, it can become a little firmer and chewier. It will still taste great, but it is hard to beat that fresh-from-the-pan moment.

    Easy Swaps And Add-Ons

One of the reasons I love this recipe is how easy it is to adapt.

If you do not eat chicken, you can leave it out and make these vegetarian. Add roasted peppers, crispy chickpeas, avocado or extra halloumi instead.

For a lighter version, use wholemeal pittas or thin flatbreads, low-fat tzatziki and plenty of salad. You could also use a rotisserie chicken to make this even quicker, especially on those evenings when you really do not fancy cooking from scratch.

If you enjoy a little extra crunch, add pomegranate seeds, toasted seeds or crushed pistachios over the top. They work so well with the sweet-and-spicy honey.

And if you are a proper chilli lover, add a drizzle of chilli oil alongside the hot honey. It is not essential, but it is very delicious.

What To Serve With Loaded Flatbreads

These are filling enough to serve on their own, especially for a quick dinner. But if you are feeding a few people or want to make more of a meal of it, they are lovely with:

A simple Greek-style salad with tomatoes, cucumber, olives and feta.

Oven chips, sweet potato wedges or crispy air-fryer potatoes.

A bowl of extra tzatziki for dipping.

Corn on the cob with a little butter, lime and chilli flakes.

A big bowl of watermelon and feta salad in the summer.

    Can You Make Them Ahead?

You can prep most of the ingredients ahead of time, which makes this recipe perfect for busy days.

Make the hot honey, slice the salad ingredients and shred the chicken earlier in the day. Store everything separately in the fridge. When you are ready to eat, all you need to do is warm the flatbreads, fry the halloumi and assemble.

I would not recommend making the finished flatbreads too far in advance because the salad can soften and the halloumi is always best freshly cooked.

    Final Thoughts

These hot honey halloumi and chicken loaded flatbreads are one of those recipes that look really impressive but could not be easier to put together.

The combination of salty crispy halloumi, juicy chicken, cool tzatziki, crunchy salad and sticky hot honey is just so good. They are quick, fresh, colourful and perfect for those nights when you fancy something comforting but do not want to spend ages cooking.

If you try them, let me know what you add to yours. Are you going for extra chilli, extra halloumi or a big dollop of tzatziki? Personally, I am always adding extra hot honey!
