    For the Oat Crust & Crumble Topping:

     180g Porridge Oats (Rolled Oats): Provides a hearty, chewy base rich in soluble fiber.

     100g Almond Flour: Gives the crust a rich, buttery flavor without needing heaps of actual butter. (You can swap for plain flour or a gluten-free flour blend if preferred).

     60ml Pure Maple Syrup: Our natural unrefined sweetener of choice.

     60ml Coconut Oil (Melted): Keeps the crust perfectly crisp and adds healthy fats.

    For the Jammy Berry Layer:

     300g Mixed Berries: Fresh or frozen work perfectly! Blueberries, raspberries, or blackberries are amazing here.

     1 tbsp Chia Seeds: To naturally thicken the berry filling and add a dose of nutrition.

     1 tbsp Fresh Lemon Juice: To brighten up the berry flavors.

    Step-by-Step Instructions

    Step 1: Prep Your Oven and Tin

    Step 3: Mix the Crust & Crumble

    In a medium mixing bowl, combine the porridge oats, almond flour, melted coconut oil, and maple syrup. Stir thoroughly until a clump-like, crumbly dough forms.

    Step 4: Assemble the Bars

    Take about two-thirds of your oat mixture and press it firmly and evenly into the bottom of your lined baking tin to form a solid base crust. Next, pour your thickened berry jam over the crust and spread it evenly to the edges. Finally, take the remaining oat mixture and crumble it loosely over the top of the berry layer.
