Let’s be honest: some days, the idea of spending hours in the kitchen feels like a mountain I just cannot climb. We’ve all been there—staring into the fridge after a long day, willing something delicious to magically appear.

Well, consider this your culinary miracle.
Today, I’m sharing a recipe for Creamy Garlic & Herb Chicken that is essentially a hug on a plate. It’s rich, it’s velvety, and—best of all—it’s deceptively simple to pull together. The secret weapon here? Boursin. If you haven’t cooked with it before, prepare to have your mind blown. It turns a standard pan sauce into something that tastes like it came straight out of a bistro kitchen.
Let’s get cooking!
The Lineup (Ingredients)
Before we start, grab these bits and bobs from your kitchen:

2 Chicken breasts: Slice these in half horizontally to create 4 thinner fillets. This helps them cook faster and more evenly.
50g Plain flour: For that perfect golden crust.
1 tsp Garlic granules: Because we love a bit of extra garlicky goodness.
1 tsp Paprika: Adds a lovely warmth and colour.
½ tsp Salt & ½ tsp Black pepper: Seasoning is everything, people!
20g Butter: To get that beautiful sear.
1 Onion: Finely diced.
250ml Chicken stock: The base for our gorgeous sauce.
150g Boursin Garlic and Herb: The star of the show.
10g Fresh parsley: Chopped, for that fresh finish.
The Method: Step-by-Step
Step 1: The Prep
Grab a shallow dish and tip in your flour, garlic granules, paprika, salt, and pepper. Give it a good whisk with a fork. Dredge your chicken fillets in this mixture until they’re nicely coated.
Step 2: The Sear
Heat a glug of oil in a large frying pan over medium-high heat. Drop in your butter. Once it’s bubbling and golden, add your chicken. Let it cook for a few minutes on each side until it’s browned all over and looks delicious. Once done, move the chicken to a plate for a moment.
Step 3: The Base
In that same pan (don’t you dare wash it—that’s where the flavour lives!), toss in your diced onion. Cook it gently until it turns soft and translucent.
Step 4: The Magic
Pour in your chicken stock, then crumble or stir in that lovely block of Boursin. Keep stirring over the heat until the cheese melts into the stock, creating a smooth, dreamy sauce.
Step 5: Bringing it Home
Pop the chicken back into the pan. Let everything simmer together for a few minutes. You’re looking for the sauce to thicken and the chicken to be cooked through perfectly.
Step 6: The Final Flourish
Sprinkle over your fresh parsley, give it a quick taste, and adjust the seasoning if you think it needs a touch more salt or pepper. Serve this up with a big pile of creamy mash, and you’ve got a meal that is going to make everyone at the table very, very happy.

A Few Quick Tips:
Don’t skip the flour: It not only helps the chicken get that nice colour, but the residual flour left in the pan also helps thicken your sauce naturally.
Serving suggestion: If you’re not feeling mash, this is also incredible over crusty bread or even some quick pasta.
Storage: If you happen to have any leftovers (though I doubt you will!), keep them in the fridge and heat gently the next day. The sauce actually gets even better the next day!
