Ingredients (Serves 2–4)

Pasta: 450g (1 lb) of your favourite pasta shape
Hummus: 250g (1 cup) of smooth hummus
Pasta Water: 120ml (½ cup) reserved pasta cooking water
Lemon: 2 tablespoons of fresh lemon juice
Sun-dried Tomatoes: 160g (1 cup), chopped
Fresh Tomatoes: 75g (½ cup), chopped
Olives: 100g (⅔ cup) sliced Kalamata olives
Basil: 3 tablespoons, finely chopped
Method
1. Cook the Pasta: Bring a large pot of salted water to a boil and cook your pasta according to the package instructions.
2. Reserve Water: Before you drain the pasta, make sure to scoop out 120ml (½ cup) of the starchy pasta water.
3. Create the Sauce: Return the drained pasta to the pot. Add your reserved pasta water, the hummus, and the lemon juice. Stir everything together until the pasta is evenly coated in a creamy, smooth sauce.
4. Add the Mix-ins: Gently fold in the chopped sun-dried tomatoes, fresh tomatoes, sliced Kalamata olives, and fresh basil.
5. Serve: Give it one last stir, taste, and add a pinch of salt or pepper if you like. Enjoy immediately!
