Ingredients

1 tbsp olive oil
1 knob of butter
½ onion, finely diced
3 cloves garlic, minced
200g dry orzo pasta
350ml vegetable stock
120ml double cream
50g vegetarian hard cheese (or Parmesan), freshly grated
A generous handful of baby spinach
A small jar of sundried tomatoes, chopped

Method
Step 1: The Base
Heat the olive oil and butter in a large pan over medium heat. Add your diced onion and cook until soft. Add the garlic and cook for another minute until fragrant.
Step 2: Toast the Orzo
Add the dry orzo to the pan. Stir it around for about 1 minute until it’s lightly toasted—this adds a wonderful depth of flavour to the dish.
Step 3: The Simmer
Pour in the vegetable stock and double cream. Bring the mixture to a gentle simmer. Let it cook for 8–10 minutes, stirring occasionally, until the pasta is tender and the liquid has reduced into a glossy, creamy sauce.
Step 4: The Finishing Touch
Stir in the baby spinach, sundried tomatoes, and your grated cheese. Keep stirring until the spinach is wilted and the cheese has melted into the sauce. If the sauce looks a little too thick, just add a tiny splash of water or extra stock.
Step 5: Serve
