What You’ll Need

Chicken: 4–6 bone-in, skin-on chicken thighs (the skin gets so crispy!).
Veg: 1 large red onion (wedged), 2 bell peppers (chopped), 250g cherry tomatoes, and 1 courgette/zucchini (sliced).
Marinade: 3 tbsp olive oil, juice and zest of 1 lemon, 3 cloves minced garlic, 1 tsp dried oregano, and 1 tsp smoked paprika.
The Finish: 75g crumbled feta cheese and plenty of fresh parsley or dill.
How to Make It
1. Prep: Preheat your oven to 200°C (Fan 180°C / Gas 6).
